Simple pasta dish COMPONENTS cubed bacon plain crumbs minced cilantro veg oil garlic bulbs, thinly sliced 130g 1/3 cup (30g) 2 tbs 2 tbs 5 450g 2 cup 320g linguine 1/4 cup (30g) 1/3 cup grape tomatoes, halved tomato puree linguine finely grated pecorino mint leaves Heat a wide skillet over low heat. Add the bacon and cook gently, stirring occasionally, for 6-9 mins or until fat renders and the bacon is crisp and browned. Using a skimmer, move the bacon to a plate. Step 7 Place the pan over low heat. Add oil, garlic and pepper, if used, and simmer, stirring sometimes, for 3 mins or until garlic softens. Add chopped tomatoes and puree simmer for 6 mins or till tomatoes yield. Step 5 Meanwhile, bring a big pot of salted water to a boil on high heat. Add the linguine and boil, stirring frequently to separate separated, for 9 mins or till tender yet with a bite. Drain pasta, saving 3/4 cup (100ml) of the cooking liquid. Step 9 Add linguine to the warm sauce in the skillet and toss lightly. If required, stir in a bit saved pasta water to thin sauce. Season lightly. pepper. Move noodle mix into bowls. Top with pecorino, crumb mix and oregano. Serve at once. Step 3 Enjoy your meal!
