This is a soft dairy with brined rind whose roots date back to the fifth era when the monks made making it in the abbey. Back then, it held milk way to keep milk.
Smoky Edam is a version of that famed cheese which is smoked in vintage clay ovens above flaming oak chip coals. Delicious with beer, this firm cheese has an outer, dark rind and a silky, gold interior.
Bleu cheese is mid- soft curd with a tangy, briny taste. It is made using molds of the safe mold, adding it forms veins across the curd in hues of green or jade. Bleu curd may be eaten alone or may be spread or shaved.
